AUSTIN l JOB TITLE: Pastry Cook RATE OF PAY: $14 - $18/hr DOE
HOURS OF WORK: Day or Night Shift as Assigned
DESCRIPTION: Pastry Cooks will assist in the creation and preparation of baked goods and desserts. Their primary responsibilities include assisting the Kitchen Manager and other BOH staff in the planning and execution of daily bakery production.
WORK DUTIES INCLUDE:
• Assists KM in preparation of various food items for service including mixing various doughnut and pastry doughs; fabricate and baking various doughnuts, pastries, churros, beignets; mixing and baking doughnuts, puff pastries and cookies, mixing and preparing frostings and fillings, icings and glazes; frosting and icing various products; making flan and other Latin inspired desserts.
• Assists KM with hands-on production, presentation, service, food and physical safety.
• Ensure timely delivery of quality products in a safe manner.
• Assists KM with preparing product transfers and requisitions for other locations and complete daily production records, waste sheets and temperature logs.
• Maintain a correct “dough” schedule to ensure product freshness.
• Assists KM in cleaning all bakery areas and maintain all hot and cold storage areas in a safe and organized condition.
• Stock and rotate racks and display cases to ensure freshness and proper appearance.
• Practice a “clean as you go” technique to maintain a clean work area.
• Remove food from production line; assist in food storage including covering and dating; pull inventory as needed.
• Effectively communicate with bakery staff, supervisory staff and delivery locations.
• Create, test and execute recipes exactly.
• Proactive in reducing waste.
• Maintain current knowledge of all areas of responsibility.
• Check computer printouts for menu amounts and recipes; review menu and purchase requirements
• Coach/train new employees for production of baked products
• Other duties as assigned.
EDUCATIONAL REQUIREMENTS: High School Graduate
EXPERIENCE REQUIREMENTS:
• High school diploma or GED.
• 3+ years baking experience.
• Basic computer literacy.
• Presentable demeanor and friendly nature.
• Creativity and knowledge of how to create new concepts in baked goods.
• Team orientation and willingness to work and support the kitchen on prep and other duties
• Specialty in puff pastry, doughnuts and beignets preferred.
• Specialty in Latin desserts (flans, churros, cookies, etc.) preferred.
• Bakery/cake decorating experience required.
• Good written and verbal communication.
• Attention to detail.
• Ability to work 20 to 30 hours per week.
• Excellent organizational skills.
• Must possess FHC certifications.
• Must possess strong professional references
• Photo record of previous accomplishments required
• Will undergo a working interview
